- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 4 garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and black pepper to taste
- ½ cup chicken broth
- Optional: lemon wedges for serving
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry with paper towels. Season with salt, pepper, paprika, and thyme.
- Heat olive oil in a large skillet over medium-high. Sear chicken skin-side down for 6–7 minutes until golden. Flip and cook another 3–4 minutes. Remove and set aside.
- Lower heat to medium, melt butter, and sauté garlic for 1 minute. Add broth and bring to a simmer.
- Return chicken to skillet skin-side up. Spoon sauce over, cover, and simmer 15–18 minutes until internal temp reaches 165°F.
- Garnish with parsley, squeeze lemon over top, and serve hot.
Notes
To save time, use boneless chicken or breasts (adjust cook time). Deglaze with wine for added depth. Add cream or coconut milk for a rich twist. Pairs great with mashed potatoes, green beans, or crusty bread.
